Marzipan

INGREDIENTS

½ kg cashew nuts
1 ½ tbsp lemon juice
1 tsp rum
2 eggs
¾ kg ground sugar
¼ tsp vanilla essence
½ tsp almond essence

METHOD

Grate nuts in a mixer (dry grinding blade & inverted cover) a little at a time so nuts just cover blades. Mix all ingredients together.
