Egg Cutlets

INGREDIENTS

8 eggs (hard boil and mash while warm)

For white sauce:
4 dsp oil
6 dsp maida
1 ½ cup milk

2 green chillies (chop without seeds)
Salt
Bread crumbs
Pepper
Oil
 
METHOD

Make a very thick white sauce as follows: Heat oil, add flour, then milk and stir briskly. Mix in egg, chillies, salt & pepper. Form into cutlets, coat with breadcrumbs and shallow fry in hot oil.
