Erica's Veg Cutlets

INGREDIENTS

4 large potatoes [boil & mash]
3-4 carrots [boil & mash]
 1 cup shelled peas [boil & mash]
2 med onions [chop]

¼ coconut [grind]
3 sprigs curry leaves [grind]
3 green chillies [grind]
Oil, salt

METHOD

Mix all the ingredients, add salt to taste. Form into cutlets and shallow fry. Could be coated in breadcrumbs before frying.

NB. If the mixture is too wet to form, add flour or breadcrumbs.
